Instructions to make to make Veg Nutri Soya Chunks Curry

  1. Wash Soya Chunks properly, then take a pan, add water in it & keep the gas on medium flame & let it boil.
  2. When water starts boiling, add soya chunks in it with 1 Teaspoon Vinegar & 1 Teaspoon Salt & boil them for 10-15 minutes so that soya absorbs water & swell properly.
  3. After 10-15 minutes, when soya swells completely, turn off the gas & take them out in a bowl.
  4. But don’t squeeze out water from them because they will become hard after some time.
  5. Then add 1/4 Cup Dahi in them, mix them properly & let them rest till gravy is prepared.
  6. Chop Onions in slices, grind Tomatoes, Green Chillies, Ginger & Garlic Cloves or Ginger garlic paste & dried red chillies finely into purée in a mixer grinder.
  7. Now take a pan or Kadhai, add oil in it & keep the gas on medium flame.
  8. When oil gets heated up, add slices onions in it & fry them till they turn into golden brown in colour.
  9. After 3-4 minutes, when they turn into golden brown in colour turn off the flame & take them out in a bowl.
  10. Let them cool down properly before grinding them.
  11. After some, grind them finely into paste in a mixer grinder.
  12. Now take another kadhai or pan, add 1 Big Spoon Oil in it & keep the gas on medium flame.
  13. When oil gets heated up, add Khade Masale, 1 Pinch Hing in it & let them sizzle.
  14. When they start sizzling, add finely grinded tomato purée in it with 1 Teaspoon Salt so that they start releasing oil quickly.
  15. After 5-6 minutes, when oil is completely released, add spices mix & grinded onion paste in it & cook them for 2-3 minutes.
  16. After 2-3 minutes, add dahi marinated soya chunks in it & cook them for 3-4 minutes by stirring them so that dahi doesn’t get burned.
  17. After 3-4 minutes, add 1/2-1 Cup Water in it with 1 Teaspoon Kewra Water or 1 Teaspoon Roasted Kasuri Methi in it & mix them properly.
  18. Now cook them for 5-7 minutes on low flame.
  19. After 5-7 minutes, stir them.
  20. Your Veg Nurti Soya Chunks Curry is ready to be served.
