I have eaten all types of Biryani and my favourite is the Calcutta style Biryani which is famous for its addition of eggs and potatoes. When we were small we had eaten Biryani in Walima/ wedding in Kolkata but as we grew it became more popular and popular " Maasha Allah". Though my grandma and mom used to cooks delicious Veg pulao and varieties of it but Biryani was never tried at home until I learnt to cook Biryani from two of my Senior colleagues who were foodie like me and loved cooking as till early 2000 YouTube were still alien😀. Both used to cook Biryani but both their methods were different. Zafar sir used to put the washed and soaked raw/kachcha rice with the cooked mutton gravy, add measured warm water, garam masala and all other ingredients and give dum whereas Purnimadi used to layer precooked rice with the cooked mutton etc the way I have done it here.
I follow both methods depending on my mood 😉😀.

Ingredients and spices that need to be Make ready to make Calcutta (Kolkata) style Mutton Biryani:

  1. 4 Boiled eggs
  2. Few Saffron strings
  3. 1 generous pinch of saffron
  4. 4 tbsp water
  5. for marination of mutton-
  6. 600 grams mutton
  7. 1 tbsp ginger
  8. 1 tbsp garlic
  9. 1/2 tsp Garam masala*
  10. 1/2 tsp Turmeric powder
  11. 1 tsp Chili powder
  12. 1/2 tsp Cummin/Jeera powder
  13. 1/2 tsp Coriander/ Dhania powder
  14. 1 pinch Saffron strands
  15. 1/2 tsp salt
  16. 2-3 tsp veg oil
  17. For Homemade Garam masala powder-
  18. 5 gms Green Cardamom
  19. 5 gms Cinnamon stick
  20. 15 pieces Cloves
  21. 3 gms Black pepper
  22. 2 gms White pepper
  23. 1 pc Mace/ Javitri
  24. 2 gms Nutmeg/ Jayfal
  25. For Potato preparation-
  26. 350 grams 4 medium sized Potatoes
  27. 1/2 tsp salt
  28. 1/4 tsp Turmeric powder
  29. 1/4 tsp Garam masala*
  30. 2 tbsp veg oil
  31. 3 cups water
  32. For fried onions / Barista-
  33. 100 gms onion thinly sliced
  34. 3 tbsp Corn flour
  35. 1/2 cup Vegetable Oil for shallow frying
  36. for cooking the Mutton-
  37. 600 gms Marinated mutton
  38. 6 tbsp Vegetable oil (use the same oil used to fry the onion)
  39. 2 tbsp ghee
  40. 2 Bay leaves, one black and 3 green cardamom,3 cloves
  41. 350 gms (gross weight) onion sliced
  42. 1 tsp ginger paste
  43. 1 tsp garlic paste
  44. 1 tsp Coriander and Cummin powder mixed
  45. 1 tsp Kashmiri Lal mirch powder
  46. 5 cups water
  47. 1 tsp Garam masala*
  48. for rice-
  49. 350 gms long grain Basmati rice
  50. as required Water enough to cook
  51. 10 gms whole Garam masala**
  52. 1 tsp salt
  53. 1/2 lemon
  54. as required Whole garam masala for cooking rice
  55. 1 Cinnamon stick
  56. 1-2 Green Cardamoms
  57. 2-3 Cloves
  58. some Black pepper and white pepper
  59. as required Shahi Jeera
  60. 1-2 Star anise
  61. as required Javitri / mace
  62. To the Biryani for Dum
  63. as required Cooked mutton
  64. 80 % cooked rice
  65. 2-3 tbsp ghee
  66. 3-4 Boiled eggs
  67. as required Cooked potatoes
  68. 1 tsp Garam masala powder*
  69. little dried rose water
  70. some Fried onions
  71. few Soaked saffron strings
  72. 1.5 tbsp Kewra water
  73. 1.5 tbsp Rose water
  74. 2-3 drops Meetha Ithar
