- 2 gms Nutmeg/ Jayfal
- For Potato preparation-
- 350 grams 4 medium sized Potatoes
- 1/2 tsp salt
- 1/4 tsp Turmeric powder
- 1/4 tsp Garam masala*
- 2 tbsp veg oil
- 3 cups water
- For fried onions / Barista-
- 100 gms onion thinly sliced
- 3 tbsp Corn flour
- 1/2 cup Vegetable Oil for shallow frying
- for cooking the Mutton-
- 600 gms Marinated mutton
- 6 tbsp Vegetable oil (use the same oil used to fry the onion)
- 2 tbsp ghee
- 2 Bay leaves, one black and 3 green cardamom,3 cloves
- 350 gms (gross weight) onion sliced
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tsp Coriander and Cummin powder mixed
- 1 tsp Kashmiri Lal mirch powder
- 5 cups water
- 1 tsp Garam masala*
- for rice-
- 350 gms long grain Basmati rice
- as required Water enough to cook
- 10 gms whole Garam masala**
- 1 tsp salt

- as required Whole garam masala for cooking rice

- 1-2 Green Cardamoms
- 2-3 Cloves
- some Black pepper and white pepper
- as required Shahi Jeera
- 1-2 Star anise
- as required Javitri / mace
- To the Biryani for Dum
- as required Cooked mutton
- 80 % cooked rice
- 2-3 tbsp ghee
- 3-4 Boiled eggs
- as required Cooked potatoes
- 1 tsp Garam masala powder*
- little dried rose water
- some Fried onions
- few Soaked saffron strings
- 1.5 tbsp Kewra water
- 1.5 tbsp Rose water
- 2-3 drops Meetha Ithar

- Wash the mutton and add all the ingredients mentioned
